Spring Chicken Dinner

This is a complete dinner composed of multiple recipes from our bariatric recipe library. It is very high in protein as there is protein in every part of this dinner! There are also fresh veggies and herbs tucked in everything. It’s incredibly moist which makes it ideal for post weight loss surgery. Every recipe can be enjoyed alone as well but they taste so delicious all together!

This dinner is a cinch to plate when you use Livliga’s Just Right Set plates. The circles on the plate allowed me to know exactly how much hummus to spread out and the small circle helped me portion the lemon scented quinoa. I also used the very cool Livspoons to easily portion 1/8 cup into a perfect cute mound that fit perfectly onto the plate.

Fresh Green Pea Hummus

Cucumber Dill Yogurt Sauce

Poached Chicken Breast

Lemon Scented Quinoa

 

Ingredients

  • 1/8 cup lemon scented quinoa
  • 2 tablespoons green pea hummus
  • 2 oz poached chicken breast, thinly sliced
  • 1 tablespoon cucumber dill yogurt sauce
  • fun garnishes!

Directions

Spread the fresh green pea hummus into a thin circle on your plate.

Top with thin chicken slices.

Spoon the cucumber dill yogurt sauce over the sliced chicken.

Scoop 1/8 of a cup of lemon-scented quinoa onto your plate.

Scatter fun garnishes!

Eat small bites with a little of everything on your fork at once. The quinoa tastes great with the yogurt sauce and hummus!
